Solid Fungi Starters Using Aspergillus spp. under Different Manufacturing Conditions

چکیده

The generation of royalties on the use foreign-made inoculum strains or starters as a result implementation ‘Nagoya Protocol’ has led to efforts and healthy competition secure useful biological resources in each country. In this study, we recognized necessity importance securing Korea produced using five fungi (Aspergillus oryzae Aspergillus niger). Specifically, quality characteristics exhibited by different strain concentrations (1, 3, 5% (v/w)) drying conditions (low-temperature air at 35 °C for 24 h high-temperature hot 45 18 h) during starter manufacturing process were analyzed. Parameters such enzyme activity free amino acid volatile flavor compound content, which may vary based production conditions, are expected produce basic data Korean-type starters.
